MAP (Modified Atmosphere Packaging) gas is a controlled gas or gas mixture used to replace normal air inside food packages to extend shelf life and maintain quality. The most common commercial MAP gases are N₂, CO₂ and O₂, used individually or in mixtures.
| N₂ – Nitrogen | Inert filler gas; displaces oxygen and helps prevent package collapse |
| CO₂ – Carbon dioxide | Inhibits many aerobic bacteria and molds |
| O₂ – Oxygen | Used when needed for product respiration or maintaining red meat color |
| Ar – Argon | Specialty / inert gas for selected applications |
| Fresh meat | Mixtures containing significant O₂ and CO₂ |
| Poultry | CO₂ / N₂ mixtures |
| Fish & seafood | CO₂ / N₂, with some O₂ depending on the product |
| Cheese | CO₂ / N₂ |
| Fresh vegetables | Relatively low O₂ with CO₂ and N₂ |
| Bakery products | CO₂ / N₂ or nitrogen-rich atmospheres |
For example, a 70% N₂ / 30% CO₂ mixture can be used for certain food applications, but it is not a universal MAP formula — the optimum composition depends on the food product, packaging film, storage temperature and required shelf life.
